Vilnius Pink Soup Fest
Every year, the city transforms into a vibrant shade of pink, bringing life to the streets and squares of Vilnius. Welcome to the Vilnius Pink Soup Festival! A one-of-a-kind celebration dedicated to Lithuania's creamy, cold, and neon pink soup — šaltibarščiai!
Pink Soup Fest began in 2023 with a simple idea to celebrate and popularize one of Lithuania's most beloved traditional dish through playfulness and gastronomy. Usually held at the end of May, but it also marks the beginning of the summer season. And honestly, what better way to welcome warm weather than with a refreshing cold dish that's been on Lithuanian's tables for generations?
What can you do at the festival?
From the moment you arrive, the energy is contagious. The festival is packed with activities that are as playful and colorful as the soup itself. Imagine sliding down a giant pink slide into the giant inflatable “soup bowl”, full of foam. Walking through amusement areas, or relaxing in leisure zones scattered across the city. There’s something for everyone, whether you’re into sports, food, or just soaking in the pink atmosphere.
One of the highlights is the pink parade going through the Old Town, marking the beginning of the festival, together with the concerts being held in the evenings. People dress up in bright pink clothes or accessories, turning the streets into a moving wave of pink. There’s even a costume contest related to šaltibarščiai, so it could be your chance to let your imagination run wild, and maybe even win a prize. And it doesn’t stop there! Hospitality staff join in the fun too, racing in the pink waiters' run, while having to balance bowls of soup without spilling a drop. There’s also the traditional IKI pink soup walk competition that draws both locals and tourists alike.
During the festival, the entire city embraces the theme with decorations, outfits, and dyes the entire city in neon pink colors. Restaurants and cafes serve creative and special twists of šaltibarščiai, along with a variety of pink-inspired foods, drinks, and snacks. It’s a full sensory experience. So if you ever get the chance, put on your favorite pink outfit and become part of this unforgettable celebration!
Bring the pink soup festival to you
Even if you’re miles away, you don’t have to miss out. The heart of the festival, šaltibarščiai, can easily be recreated at your home, adding a splash of pink straight to your kitchen!
The soup is made of simple ingredients: fresh cucumbers, pickled or boiled beets, salt, dill and/or green onions, and kefir that can be mixed with buttermilk or sour cream for a more creamy taste.
The traditional beetroot pink, cold soup is usually served with butter, boiled or crispy, deep-fried potatoes on the side. You can also add hard-boiled eggs to the soup if you like them. It’s a creamy, slightly sour, fresh, and perfect dish to cool down during summer days!
Whether you’re a festival fan, a pink color lover, a foodie, or someone who just looks for fun during the summer, Vilnius Pink Soup Fest can be a perfect place for you, promising a unique adventure you won’t forget! Dress in pink, bring your curiosity, and let yourself be a part of the city full of culture, food, and fun. Perhaps that one bowl of cold pink soup might just become your new favorite summer tradition!
